New York-style cheesecake:
Ingredients:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 4 (8 oz) packages cream cheese, softened
- 1 1/4 cups granulated sugar
- 1 tsp vanilla extract
- 4 large eggs
- 2/3 cup sour cream
- Whipped cream and fresh berries for topping (optional)
Instructions:
- Preheat the oven to 325°F (165°C).
- In a medium bowl, mix together the graham cracker crumbs, melted butter, and 1/4 cup granulated sugar until well combined. Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes.
- In a large mixing bowl, beat the cream cheese, 1 1/4 cups granulated sugar, and vanilla extract until smooth and creamy. Beat in the eggs, one at a time, making sure to scrape the bowl after each addition. Stir in the sour cream.
- Pour the mixture into the prepared crust and smooth the top with a spatula. Bake for 55-60 minutes or until the edges are lightly browned and the center is just set. The cheesecake should still jiggle slightly when you shake the pan.
- Remove the cheesecake from the oven and run a knife around the edges to loosen it from the pan. Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight.
- To serve, remove the sides of the springform pan and slice the cheesecake into wedges. Serve with whipped cream and fresh berries, if desired.
