New York-style cheesecake

New York-style cheesecake:

Ingredients:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 2/3 cup sour cream
  • Whipped cream and fresh berries for topping (optional)

Instructions:

  1. Preheat the oven to 325°F (165°C).
  2. In a medium bowl, mix together the graham cracker crumbs, melted butter, and 1/4 cup granulated sugar until well combined. Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes.
  3. In a large mixing bowl, beat the cream cheese, 1 1/4 cups granulated sugar, and vanilla extract until smooth and creamy. Beat in the eggs, one at a time, making sure to scrape the bowl after each addition. Stir in the sour cream.
  4. Pour the mixture into the prepared crust and smooth the top with a spatula. Bake for 55-60 minutes or until the edges are lightly browned and the center is just set. The cheesecake should still jiggle slightly when you shake the pan.
  5. Remove the cheesecake from the oven and run a knife around the edges to loosen it from the pan. Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight.
  6. To serve, remove the sides of the springform pan and slice the cheesecake into wedges. Serve with whipped cream and fresh berries, if desired.
